Cabbage- Savory- Aubervilliers
Brassica oleracea capitata sabauda
Gorgeous texted leaves adorn this amazingly flavored cabbage. Found frequently in French markets, there is a good reason why we should be seeing these more markets in Southern California. Named after the area of its traditional cultivation, Plain of Aubervilliers in France, it dates back to the turn of the century. Heads are about 3 lbs but can be harvested at earlier stages.
Suggested Planting Requirements: Cabbages need very rich soil to be strong producers. Amending soil organically before planting is recommended. When growing cabbage in particularly cold areas, grow in your warmest spot in the garden. For San Diego growers simply grow in full sun. Cabbage is hardy enough to direct sow.
Growing recommendation: cabbages can be grown in fall or spring if the conditions meet the growing temperatures. Spacing should e considered as cabbage plants can take up a considerable amount of space.
Harvesting and Storage: Harvest as soon as the cabbage head is the desired size. Harvest by cutting through the base of the plant that holds the head. You can also twist the plant head off but this is more damaging to the plant. Do not wash until use to prevent premature rot. Store in the refrigerator for weeks.
Special Growing considerations:
Savory cabbage tends to need a bit more space in between plants. Great companion plants for southern California growers would be plants that provide a bit of shade such as peas or taller flowers.
