This squash is a staple on our farm and allows us to make delicious and healthy “pasta” meals from its pasta like insides. You simply cook the squash and then scoop out the middle for a pasta alternative that will make even the pickiest of eaters happy.  It’s a great break away from traditional squash and can keep in the kitchen for weeks and the fridge for up to several months. This vining squash can grow quite vigorously. Best if planted in an area where it can take up lots of room. Alternatively, it can be grown over trellising to maximize space in small gardens. Resistant to powdery mildew.

Suggested Planting Requirements: Squash seeds can easily be started indoors or out.  Plant outdoors when temperatures are above 50 degrees at night. For coastal areas, it’s best to wait until cool wet spring weather has passed and days are warm and sunny.

For those in inland areas where you freeze or get cold winters, you can use plastic mulches to warm the soil. If planting inside or in a greenhouse, plant one seed per cell to avoid unnecessary waste in thinning. If you are planning directly in the ground sow groups of 2 to 3 seeds 1 inch deep and 2 feet apart. When seedlings have 4 leaves, thin to one strong seedling per group. Or, plant in slightly mounded hills, 2 feet in diameter. Adding a small amount of organic fertilizer to each mound is recommended for the best growth.

Growing Recommendations: Squash needs deep mounds of organic matter, rich soil, and heavy, consistent watering.  All squash are extremely frost sensitive, so use plastic mulches to heat soils in early spring and row covers to protect from frost at both ends of the growing cycle, especially in short summer growing seasons.  Avoid overhead watering to prevent powdery mildew. Any squash can be planted in 20” container if space is limited. If birds are a nuisance in your garden, place row covers over your squash plants. Be sure to give you squash adequate space to grow, it will allow for more productive plants.

Harvesting & Storage:  Spaghetti squash should be harvested when they are fully yellow and hard.  The meat inside will be tender and delicious.
